Description

A hearty slow-cooked beef chuck roast with tender potatoes and carrots, perfect for a comforting meal.


Ingredients

  • 3 lb beef chuck roast
  • 5 red or Yukon Gold medium potatoes (halved)
  • 8 oz baby carrots
  • 12 oz jar of beef gravy or gluten-free gravy

Instructions

  1. Using a 6 quart slow cooker, spray the slow cooker with nonstick cooking spray or use a Crockpot liner.
  2. Place roast beef on the bottom of the slow cooker, top with potatoes and carrots. The potatoes and carrots can be placed around the roast or on top as it fits your slow cooker.
  3. Pour the gravy directly over the ingredients in the slow cooker.
  4. Cover and cook on low for 8 hours.
  5. Carefully remove and serve.

Notes

  • For added flavor, you can season the roast with salt and pepper before placing it in the slow cooker.
  • Feel free to add other vegetables like onions or celery for more variety.
