- 2 ½ cups (312 g) all-purpose flour
- ¾ cup (75 g) unsweetened cocoa powder (Dutch-processed)
- 1 ½ teaspoons ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground allspice
- 1 teaspoon baking powder
- ½ teaspoon fine sea salt
- 1 cup (2 sticks / 227 g) unsalted butter, melted and cooled slightly
- 1 ½ cups (300 g) granulated sugar
- 1 ½ cups (300 g) light brown sugar, packed
- 3 large eggs, at room temperature
- 1 large egg yolk, at room temperature
- 2 tablespoons dark molasses
- 1 teaspoon pure vanilla extract
- 1 teaspoon pure ginger extract
- ½ cup (75 g) candied ginger, finely chopped (optional)
- 1 cup (170 g) white chocolate chips (optional)
- 1 ½ cups (180 g) powdered sugar, sifted (for the glaze)
- 3–4 tablespoons milk or cream (for the glaze)
- ½ teaspoon pure vanilla extract (for the glaze)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the flour, cocoa powder, ground ginger, cinnamon, nutmeg, cloves, allspice, baking powder, and sea salt.
- In a separate bowl, cream the melted butter, granulated sugar, and light brown sugar until smooth.
- Add the eggs, egg yolk, molasses, and extracts, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the candied ginger and white chocolate chips if using.
- Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are set.
- For the glaze, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth. Drizzle over cooled cookies.
