Ingredients

  • ¾ cup (75 g) unsweetened cocoa powder (Dutch-processed)
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground allspice
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 1 cup (2 sticks / 227 g) unsalted butter, melted and cooled slightly
  • 1 ½ cups (300 g) granulated sugar
  • 1 ½ cups (300 g) light brown sugar, packed
  • 3 large eggs, at room temperature
  • 1 large egg yolk, at room temperature
  • 2 tablespoons dark molasses
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure ginger extract
  • ½ cup (75 g) candied ginger, finely chopped (optional)
  • 1 cup (170 g) white chocolate chips (optional)
  • 1 ½ cups (180 g) powdered sugar, sifted (for the glaze)
  • 34 tablespoons milk or cream (for the glaze)
  • ½ teaspoon pure vanilla extract (for the glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, cocoa powder, ground ginger, cinnamon, nutmeg, cloves, allspice, baking powder, and sea salt.
  3. In a separate bowl, cream the melted butter, granulated sugar, and light brown sugar until smooth.
  4. Add the eggs, egg yolk, molasses, and extracts, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the candied ginger and white chocolate chips if using.
  6. Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are set.
  8. For the glaze, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth. Drizzle over cooled cookies.
