- 2 cups cooked chicken breast, shredded
- ⅓ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard

- 1 tablespoon fresh dill, chopped
- Salt and black pepper to taste

Instructions
- Make the Chicken Salad: In a medium bowl, combine the shredded chicken, Greek yogurt, mayonnaise, and Dijon mustard. Stir until well blended. Add chopped celery, green onion, fresh dill, salt, and pepper. Mix thoroughly. Chill for 15–20 minutes to let the flavors meld.
- Prepare the Cucumber Ribbons: Wash and dry your cucumbers. Using a vegetable peeler or mandoline slicer, shave long, thin strips from end to end. Avoid the seedy center for easier rolling. Pat the ribbons dry with a paper towel to prevent sogginess.
- Assemble the Roll Ups: Lay out a cucumber ribbon on a flat surface. Spoon about a tablespoon of the chicken salad near one end and gently roll it up like a sushi roll. Repeat with remaining ribbons and filling.
- Chill and Serve: Arrange the roll ups seam-side down on a platter. You can sprinkle with paprika or everything bagel seasoning for a touch of flavor and flair. Chill for 10–15 minutes before serving.
