A delicious creamy garlic chicken penne dish made in a slow cooker.

- 2 pounds boneless skinless chicken breasts
- 1 1/2 cups heavy cream
- 1 cup chicken broth
- 8 ounces cream cheese, cubed
- 3/4 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 12 ounces uncooked penne pasta
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Add chicken breasts to the slow cooker. Pour in chicken broth and heavy cream. Add garlic, cream cheese (cut into cubes), salt, pepper, and Italian seasoning. Stir gently to distribute seasonings.
- Cover and cook on low for 5–6 hours or high for 3–4 hours until chicken is fully cooked and fork-tender.
- Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the slow cooker and stir to combine.
- Stir in uncooked penne pasta. Make sure pasta is mostly submerged in the sauce. Cover and cook on high for 20–30 minutes, stirring once halfway through.
- Check pasta for doneness around the 20-minute mark. Once cooked, stir in grated Parmesan until fully melted and creamy.
- Adjust seasoning to taste. Garnish with chopped fresh parsley and serve hot.

- This dish is perfect for meal prep and can be stored in the refrigerator for 3-4 days.
