Description
A delicious and creamy chicken casserole topped with crunchy French-fried onions.
Ingredients

- 2 tbsp olive oil
- 1 1/2 lbs boneless, skinless chicken breasts, chopped into bite-sized pieces
- 1 small yellow onion, thinly sliced
- 1 can (10 oz) cream of chicken soup
- 3/4 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 cup French-fried onions (plus extra for topping)
- salt and black pepper, to taste
Instructions
- Preheat oven to 350°F (180°C). Grease a 9×13-inch casserole dish.
- Heat 1 tbsp olive oil in a skillet. Cook chicken with salt and pepper until browned and fully cooked. Remove and set aside.
- Add remaining olive oil to skillet. Sauté onions until soft and golden, about 5 minutes.
- In a large bowl, combine cooked chicken, onions, cream of chicken soup, milk, and shredded cheese. Mix well.
- Spread mixture into prepared casserole dish. Top with French-fried onions and extra cheese if desired.
- Bake for 25–30 minutes until hot, bubbly, and golden on top. Let cool slightly before serving.
Notes
- Feel free to add other vegetables to the casserole for extra nutrition.
- This dish can be made ahead of time and stored in the refrigerator until ready to bake.
