Description

Delicious crispy potato pancakes made with grated russet potatoes and sharp cheddar cheese.


Ingredients

  • 1 cup sharp cheddar cheese (shredded)
  • 1 large egg (beaten)
  • ¼ cup all-purpose flour
  • ¼ cup green onions (finely chopped)

Instructions

  1. Rinse grated potatoes under cold water and squeeze out excess moisture using a clean kitchen towel.
  2. In a mixing bowl, combine drained potatoes with cheddar cheese, egg, flour, green onions, salt, and pepper; mix well.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Scoop about ¼ cup of the mixture and shape it into pancakes; repeat until all batter is used.
  5. Fry pancakes for 4-5 minutes per side until golden brown.
  6. Drain on paper towels before serving.

Notes
