- 1 cup sharp cheddar cheese (shredded)
- 1 large egg (beaten)

Instructions
- Rinse grated potatoes under cold water and squeeze out excess moisture using a clean kitchen towel.
- In a mixing bowl, combine drained potatoes with cheddar cheese, egg, flour, green onions, salt, and pepper; mix well.
- Heat vegetable oil in a large skillet over medium heat.
- Scoop about ¼ cup of the mixture and shape it into pancakes; repeat until all batter is used.
- Fry pancakes for 4-5 minutes per side until golden brown.
- Drain on paper towels before serving.
Notes
- Make sure to squeeze out as much moisture as possible from the grated potatoes for crispier pancakes.
