Description

A creamy and cheesy zucchini chicken bake that’s easy to prepare and perfect for dinner.


Ingredients

  • 2 medium zucchini (chopped into bite-sized pieces)
  • 2 cups shredded cooked chicken
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese

Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish with oil or use cooking spray.
  2. In a large bowl, combine the zucchini, chicken, sour cream, garlic powder, onion powder, salt, and pepper. Mix well to coat everything evenly.
  3. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  4. Sprinkle the mozzarella and Parmesan cheese on top.
  5. Cover the dish with foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
  7. Let it cool for 5 minutes before serving.
