Description

Delicious homemade chocolate chip cookies that are soft, chewy, and loaded with chocolate chips.


Ingredients

  • 1 cup (2 sticks, 200g) unsalted butter (softened to room temperature)
  • ½ cup (100g) light brown sugar (lightly packed)
  • ½ cup (100g) granulated sugar
  • 2 large eggs (at room temperature)
  • 1 (3-ounce) package vanilla instant pudding mix (JELL-O brand or other)
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups (300g) all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups (265g) chocolate chips

Instructions

  1. Preheat the oven to 350°F/180°C. Line a cookie sheet with parchment paper or silicone baking mat.
  2. In a large bowl, using a hand held mixer beat the butter until creamy (30 seconds). Add sugar and beat until well combined (2 minutes).
  3. Add eggs, pudding mix, and vanilla extract, and beat until the eggs are well incorporated.
  4. In a separate bowl, combine the dry ingredients (flour, baking soda, and salt). Mix that with the wet ingredients until just combined.
  5. Fold in the chocolate chips.
  6. Using a small cookie scoop (1 tablespoon size), scoop out cookie balls onto a cookie sheet 2 inches apart.
  7. Bake in a preheated oven for 10-12 minutes until the bottom of the cookie is lightly browned.
  8. Allow the cookies to cool for 2 minutes on the baking sheet, then transfer to a wire rack to cool completely.
