Delicious chocolate sandwich cookies filled with a creamy raspberry filling.

- 1 cup all-purpose flour
- 2/3 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 10 tablespoons unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup white sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup semi-sweet or dark chocolate chips
- 1 cup raspberries, fresh or frozen
- 6 tablespoons unsalted butter, softened
- 1 oz full-fat cream cheese
- 1½ to 2 cups powdered sugar
- 1/4 teaspoon salt
Instructions
- Make the Chocolate Cookie Dough: Whisk dry ingredients. Beat butter and sugars until fluffy. Mix in egg and vanilla, then dry ingredients and chocolate chips.
- Chill the Dough: Cover and refrigerate dough for at least 3 hours to control spreading.
- Bake the Cookies: Scoop dough, place on lined baking sheets, and bake at 350°F for 8–10 minutes.
- Prepare Raspberry Puree: Blend raspberries, strain seeds, then simmer puree until thick. Cool completely.
- Make the Filling: Beat butter and cream cheese. Add powdered sugar, salt, and cooled raspberry puree.
- Assemble Sandwich Cookies: Spread filling on one cookie and top with another to form sandwiches.
Notes
- For a sweeter filling, adjust the amount of powdered sugar to taste.
- These cookies can be stored in an airtight container for several days.
