Description

Ingredients

  • 10 tablespoons unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup white sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup semi-sweet or dark chocolate chips
  • 1 cup raspberries, fresh or frozen
  • 6 tablespoons unsalted butter, softened
  • 1 oz full-fat cream cheese
  • to 2 cups powdered sugar
  • 1/4 teaspoon salt

Instructions

  1. Make the Chocolate Cookie Dough: Whisk dry ingredients. Beat butter and sugars until fluffy. Mix in egg and vanilla, then dry ingredients and chocolate chips.
  2. Chill the Dough: Cover and refrigerate dough for at least 3 hours to control spreading.
  3. Bake the Cookies: Scoop dough, place on lined baking sheets, and bake at 350°F for 8–10 minutes.
  4. Prepare Raspberry Puree: Blend raspberries, strain seeds, then simmer puree until thick. Cool completely.
  5. Make the Filling: Beat butter and cream cheese. Add powdered sugar, salt, and cooled raspberry puree.
  6. Assemble Sandwich Cookies: Spread filling on one cookie and top with another to form sandwiches.

Notes

  • For a sweeter filling, adjust the amount of powdered sugar to taste.
