Description

Delicious chocolate cookies topped with pistachios, perfect for any occasion.


Ingredients

  • 1 tablespoon instant coffee
  • 2 tablespoons hot water
  • 1 cup icing sugar
  • 1 stick unsalted butter, room temperature
  • 1 large egg, beaten
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup melted dark chocolate
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, dissolve the instant coffee in hot water.
  3. In a large bowl, beat together the butter, icing sugar, and the coffee mixture until smooth.
  4. Add the beaten egg and mix well.
  5. In another bowl, whisk together the all-purpose flour, cornstarch, and ground cinnamon.
  6. Gradually add the dry ingredients to the wet mixture and stir until combined.
  7. Fold in the melted dark chocolate and chopped pistachios.
  8. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until cookies are set.
  10. Let cool before serving.

Notes

  • For a richer flavor, use dark chocolate with a high cocoa content.
  • You can substitute chopped nuts of your choice for pistachios.
