Zucchini Fritters with Dill Sauce

Description

Delicious zucchini fritters served with a refreshing dill sauce, perfect for appetizers or sides.


Ingredients

Scale
  • ½ cup sour cream or Greek yogurt
  • 1 Tablespoon freshly chopped dill weed (or 1 teaspoon dried dill weed)
  • Salt and pepper (to taste)
  • ½ Tablespoon lemon juice
  • ¼ teaspoon garlic powder
  • 1 teaspoon extra-virgin olive oil
  • 1 lb. zucchinis (trimmed, grated)
  • 1 teaspoon salt
  • 4 ½ Tablespoon flour
  • ¼ cup Parmesan cheese
  • 1 large egg (beaten)
  • ½ teaspoon garlic powder
  • Cooking spray

Instructions

  1. Prepare the sauce/dip: add sour cream or Greek yogurt, dill weed, salt and pepper, to taste, lemon juice, and garlic powder in a bowl. Stir to combine and transfer into a bowl. Drizzle with olive oil and refrigerate while you make the fritters.
  2. Grate your zucchinis: wash and trim the zucchinis. Grate the zucchinis using a box grater. Transfer the zucchinis into a colander and sprinkle them with salt. Let the zucchinis stand for 10 minutes and drain.
  3. After 10 minutes, squeeze the zucchinis and transfer them onto a cheesecloth. Twist the cloth to remove excess liquid and place the zucchinis in a bowl.
  4. Add flour, Parmesan cheese, egg, and garlic powder. Stir until all is well combined.
  5. If needed, season with additional salt.
  6. Preheat your air fryer for 10 minutes at 350°F.
  7. Shape the mixture into 8 patties.
  8. Working in batches if necessary, coat the tops of the fritters with cooking spray. Arrange the fritters into a frying basket, in a single layer, and air-fry for 7 minutes.
  9. Flip the fritters and air-fry them for another 7 minutes.
  10. Serve the zucchini fritters with prepared sour cream, dill sauce/dip.

Notes

  • Make sure more water is removed from the zucchinis for crispier fritters.
  • These fritters can also be pan-fried if preferred.
