Description
Delicious zucchini fritters served with a refreshing dill sauce, perfect for appetizers or sides.
Ingredients

- ½ cup sour cream or Greek yogurt
- 1 Tablespoon freshly chopped dill weed (or 1 teaspoon dried dill weed)
- Salt and pepper (to taste)
- ½ Tablespoon lemon juice
- ¼ teaspoon garlic powder
- 1 teaspoon extra-virgin olive oil
- 1 lb. zucchinis (trimmed, grated)
- 1 teaspoon salt
- 4 ½ Tablespoon flour
- ¼ cup Parmesan cheese
- 1 large egg (beaten)
- ½ teaspoon garlic powder
- Cooking spray
Instructions
- Prepare the sauce/dip: add sour cream or Greek yogurt, dill weed, salt and pepper, to taste, lemon juice, and garlic powder in a bowl. Stir to combine and transfer into a bowl. Drizzle with olive oil and refrigerate while you make the fritters.
- Grate your zucchinis: wash and trim the zucchinis. Grate the zucchinis using a box grater. Transfer the zucchinis into a colander and sprinkle them with salt. Let the zucchinis stand for 10 minutes and drain.
- After 10 minutes, squeeze the zucchinis and transfer them onto a cheesecloth. Twist the cloth to remove excess liquid and place the zucchinis in a bowl.
- Add flour, Parmesan cheese, egg, and garlic powder. Stir until all is well combined.
- If needed, season with additional salt.
- Preheat your air fryer for 10 minutes at 350°F.
- Shape the mixture into 8 patties.
- Working in batches if necessary, coat the tops of the fritters with cooking spray. Arrange the fritters into a frying basket, in a single layer, and air-fry for 7 minutes.
- Flip the fritters and air-fry them for another 7 minutes.
- Serve the zucchini fritters with prepared sour cream, dill sauce/dip.
Notes
- Make sure more water is removed from the zucchinis for crispier fritters.
- These fritters can also be pan-fried if preferred.
