- 2 medium sweet potatoes (about 400g), peeled and cubed
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 cup rolled oats
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Cook sweet potatoes in salted water for about 15 minutes until tender. Drain and mash until smooth.
- In a large bowl, combine black beans, chopped onion, and minced garlic. Mash with a fork, leaving some beans whole for texture.
- Mix in the mashed sweet potatoes, oats, cumin, paprika, salt, and pepper until well combined.
- Shape the mixture into six patties and place them on a parchment-lined baking sheet.
- Bake at 400°F (200°C) for 20-25 minutes until golden brown or grill if preferred.
- Serve on buns or lettuce wraps with your choice of toppings like avocado or salsa.

- For added flavor, you can include chopped herbs such as cilantro or parsley.
- These patties freeze well, so you can prepare them in advance.
