A delicious and festive twist on classic deviled eggs, enhanced with avocado and Greek yogurt for creaminess.

- 12 large eggs
- 1 ripe Hass avocado
- 3 tablespoons Greek yogurt or mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 cup baby spinach (lightly packed)
- 2 teaspoons lemon juice
- 3 cherry tomatoes or mini sweet peppers (for garnish)
- 1/4 teaspoon paprika or red pepper flakes (optional)
Instructions
- Place eggs in a pot of cold water and bring to a boil. Once boiling, reduce heat and simmer for 10 minutes. Transfer eggs to an ice bath and peel when cool.
- Slice each egg in half lengthwise and remove the yolks.
- In a food processor or bowl, combine yolks, avocado, Greek yogurt (or mayo), Dijon mustard, garlic powder, salt, spinach, and lemon juice. Blend until smooth and green.
- Spoon the mixture into a piping bag fitted with a star or closed tip. Pipe the filling onto each egg white half in a swirl to mimic a Christmas tree shape.
- Cut cherry tomatoes or mini peppers into star shapes and place one on top of each tree.
- Sprinkle with paprika or red pepper flakes if desired.
- Chill for 15–20 minutes before serving. Decorate your platter with fresh herbs or greens for a festive look.
