Description

A delicious and festive twist on classic deviled eggs, enhanced with avocado and Greek yogurt for creaminess.


Ingredients

  • 12 large eggs
  • 1 ripe Hass avocado
  • 3 tablespoons Greek yogurt or mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup baby spinach (lightly packed)
  • 2 teaspoons lemon juice
  • 3 cherry tomatoes or mini sweet peppers (for garnish)
  • 1/4 teaspoon paprika or red pepper flakes (optional)

Instructions

  1. Place eggs in a pot of cold water and bring to a boil. Once boiling, reduce heat and simmer for 10 minutes. Transfer eggs to an ice bath and peel when cool.
  2. Slice each egg in half lengthwise and remove the yolks.
  3. In a food processor or bowl, combine yolks, avocado, Greek yogurt (or mayo), Dijon mustard, garlic powder, salt, spinach, and lemon juice. Blend until smooth and green.
  4. Spoon the mixture into a piping bag fitted with a star or closed tip. Pipe the filling onto each egg white half in a swirl to mimic a Christmas tree shape.
  5. Cut cherry tomatoes or mini peppers into star shapes and place one on top of each tree.
  6. Sprinkle with paprika or red pepper flakes if desired.
  7. Chill for 15–20 minutes before serving. Decorate your platter with fresh herbs or greens for a festive look.
