- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, diced
- 2 (15 oz) cans Great Northern beans, drained and rinsed
- 1 (4 oz) can diced green chilies
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 3 cups low-sodium chicken broth
- 1 cup sour cream
- 1/2 cup heavy cream or half-and-half
- Salt and freshly ground black pepper to taste
- Optional toppings: shredded Monterey Jack cheese, chopped cilantro, diced avocado, sliced jalapeños, lime wedges
Instructions
- Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the garlic and cook for another 30 seconds until fragrant.
- Cook Chicken: Add the diced chicken to the pot. Season with salt and pepper. Cook, stirring occasionally, until the chicken is no longer pink on the outside, about 5-6 minutes.
- Add Base Ingredients: Stir in the beans, green chilies, cumin, oregano, and cayenne pepper (if using). Pour in the chicken broth and bring the mixture to a simmer.
- Simmer: Reduce heat to low, cover, and let simmer for 15-20 minutes, or until the chicken is cooked through and tender.
- Creamy Finish: Remove the pot from the heat. In a small bowl, whisk the sour cream and heavy cream together until smooth. Stir a ladleful of the hot chili broth into the cream mixture to temper it (this prevents curdling). Then, pour the tempered cream mixture back into the pot, stirring until fully incorporated and creamy.
- Season & Serve: Taste the chili and adjust seasoning with additional salt and pepper as needed. Serve hot with your favorite toppings like shredded cheese, cilantro, and avocado.
Notes
- This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a spicier chili, add more cayenne pepper or diced jalapeños.
