- 1 package (15 count) mini phyllo pastry shells, thawed
- 8 oz Brie cheese, rind removed, cut into 15 small cubes
- 1/2 cup fresh or frozen cranberries, coarsely chopped
- 2 tablespoons honey
- 1 tablespoon fresh thyme leaves, finely chopped
- 1 tablespoon balsamic glaze (optional, for garnish)
- 1 tablespoon unsalted butter, melted (optional, for brushing phyllo)
- Pinch of salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Arrange the phyllo pastry shells on a baking sheet.
- In a bowl, combine the cranberries, honey, thyme, salt, and pepper.
- Place a cube of Brie in each phyllo shell and top with the cranberry mixture.
- If desired, brush the tops of the phyllo shells with melted butter.
- Bake for 15-20 minutes or until the pastry is golden and the cheese is melted.
- Drizzle with balsamic glaze (if using) before serving.
Notes
- These bites are best served warm.
- You can prepare the filling ahead of time and assemble the shells just before baking.
