Description
Delicious and crispy Greek-style chicken wings marinated in a tangy lemon and garlic sauce.
Ingredients
Scale
- 1 T freshly-grated lemon zest (optional, but recommended)
- 1 T fresh-squeezed lemon juice (or more if you really like lemon)
- 1/4 cup extra-virgin olive oil
- 1 tsp. minced garlic (or more)
- 1 tsp. salt (more or less to taste)
- 1 tsp. dried oregano
- 1 pound trimmed raw chicken wings (see notes)
- Whipped Feta Dip with Sumac for serving (optional)
Instructions
- Trim the wings if needed.
- Zest the skin from a lemon and then squeeze the juice.
- Whisk together lemon zest (if using), lemon juice, olive oil, garlic, oregano, salt, and pepper to make the marinade.
- Put the wings and marinade in a large Ziploc bag or plastic container with a snap-tight lid, and let them marinate in the fridge for a minimum of four hours, or marinating them overnight or for eight hours or longer will give more flavor.
- When you’re ready to cook, drain the wings into a colander placed in the sink and discard the marinade.
- Let wings come to room temperature while you preheat Air Fryer to 400F/205C.
- Line Air Fryer rack with Air Fryer Parchment Paper if using. Try to arrange wings in the Air Fryer basket so they are not touching each other.
- Cook wings 8 minutes, or until they are golden-brown on the first side. (Some Air Fryers cook a bit hotter, so I’d start checking after 6 minutes.)
- Remove Air Fryer basket and turn wings over (with tongs or a fork so you don’t burn your fingers).
- Put basket back into the Air Fryer and cook until the second side is golden brown and wings have reached 165F/75C in the thickest part.
- While the wings cook, make the Whipped Feta Dip with Sumac (or other dip or sauce of your choice).
- Serve the Greek Wings hot, with plenty of napkins.
Notes
- We didn’t need to do much trimming for the Kirkland Party Wings we used, but some grocery store wings will need to have excess skin and fat trimmed.
