Description

A delicious and easy cottage cheese scramble perfect for breakfast!


Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese (small curd, low-fat or full-fat)
  • 1 teaspoon butter or olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon chopped chives (optional)
  • 1/4 teaspoon paprika or chili flakes (optional)

Instructions

  1. Crack the eggs into a bowl and whisk until fully blended.
  2. Heat butter or olive oil in a nonstick skillet over medium-low heat.
  3. Pour in the whisked eggs and immediately add the cottage cheese.
  4. Stir gently and continuously, allowing the eggs to cook slowly.
  5. When nearly set, season with salt and pepper, and optional chives or spices.
  6. Remove from heat while still slightly glossy and serve immediately.

Notes

  • This dish can be customized by adding other vegetables or spices as desired.
