Ingredients

  • 10 oz. Long pasta (tagliatelle, spaghetti, linguine, or fettuccine)
  • 2 Tablespoon butter
  • ½ cup chopped shallots or green onions
  • ½ cup chopped celery
  • 2 cloves garlic (minced)
  • 10 oz. brown mushrooms (sliced)
  • 2 Tablespoon flour
  • 2 cups chicken stock
  • ½ cup half-and-half cream
  • 6 oz. cream cheese (with chives for flavor)
  • ¼ cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 ½ cup leftover turkey (cubed)
  • 1 ½ cup grated mozzarella cheese
  • 2 Tablespoon Parmesan cheese
  • Fresh basil or parsley (chopped, for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Cook your desired type of pasta in a pot of salted boiling water according to the package directions, ensuring it is al dente.
  2. Preheat oven to 350°F and prepare a 9×13-inch baking dish.
  3. Melt butter in a large skillet over medium-high heat.
  4. Add shallots (or green onions) and celery; cook, stirring for 5 minutes. Add garlic and cook until fragrant.
  5. Add mushrooms and cook until just tender. Stir in flour and cook for 1 minute.
  6. Pour in the chicken stock and half cream; cook for 1 minute.
  7. Stir in cream cheese, sour cream, and Italian seasoning. Remove from heat and ensure sour cream is well mixed to prevent lumps after baking. Season with salt and pepper to taste.
  8. Combine the cooked pasta, turkey, and ½ cup of mozzarella with the prepared sauce.
  9. Transfer the mixture into the baking dish and top with the remaining mozzarella and Parmesan cheese.
  10. Bake for 25 minutes or until the cheese is melted and bubbly.
  11. Cool for 10 minutes before serving.
  12. Serve garnished with basil or chopped parsley.
