Delicious chocolate cookies filled with a creamy marshmallow filling.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 1/2 cup marshmallow fluff
- 1/4 cup unsalted butter, softened
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, cream the softened butter and granulated sugar until fluffy. Add the egg and vanilla; mix well.
- Gradually combine the dry ingredients with the wet mixture, adding milk as needed for consistency.
- Drop rounded tablespoons of batter onto prepared sheets and bake for about 10 minutes until springy.
- While cooling, whip together the filling ingredients until smooth. Once cookies are cool, spread filling between two halves.
Notes
- You can adjust the sweetness by adding more or less powdered sugar in the filling.
- These cookies are best enjoyed fresh but can be stored in an airtight container for a few days.
