A moist and delicious apple cinnamon loaf that is perfect for breakfast or dessert.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 cups diced apples (preferably Granny Smith)
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (walnuts or pecans, optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, mix eggs, oil (or melted butter), and vanilla until smooth.
- Fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the diced apples and nuts if using.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- Use Granny Smith apples for the best flavor.
- Store leftovers in an airtight container to keep the loaf fresh.
