Description
A delicious Swiss cheese and corned beef roll that is crispy and savory, perfect for a snack or appetizer.

- 1 cup shredded Swiss cheese
- 6 slices corned beef
- 1/2 cup sauerkraut, well-drained
- 1/4 cup sugar-free Russian or Thousand Island dressing
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Drain the sauerkraut using a cloth or paper towel to remove all excess moisture. Set aside.
- Preheat a non-stick skillet over medium heat.
- Sprinkle about 1/3 to 1/2 cup of shredded Swiss cheese in a rectangular shape on the skillet.
- Let the cheese melt and cook until the edges are golden and crisp, about 2–3 minutes.
- Lay 2-3 slices of corned beef and a spoonful of sauerkraut in the center of the cheese rectangle.
- Allow it to heat for another 30 seconds so the filling warms slightly.
- Using a spatula, gently roll the cheese over the filling to form a tight log.
- Let it cook seam-side down for another 30 seconds to seal and crisp.
- Remove from the skillet and let it cool slightly.
- Serve warm with dipping sauce and garnish with parsley if desired.
