Description
A delicious and creamy Cajun smoked sausage pasta dish that is quick and easy to prepare.

- 12 oz smoked sausage, sliced
- 8 oz penne pasta
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 can (14 oz) diced tomatoes, drained
- 2 tsp Cajun seasoning
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Chopped parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned, about 3-4 minutes.
- Add diced onion, bell pepper, and garlic to the pot. Sauté until vegetables are softened, about 3 minutes.
- Stir in Cajun seasoning, penne pasta, chicken broth, heavy cream, and diced tomatoes. Bring to a simmer.
- Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Stir in grated Parmesan cheese. Season with salt and black pepper to taste. Simmer for an additional minute until the sauce is creamy.
- Garnish with chopped parsley before serving.
Notes
- This dish is perfect for a quick weeknight meal.
- Feel free to adjust the spice level by adding more or less Cajun seasoning.
- Leftovers can be stored in the refrigerator for up to 3 days.
