- 28 oz cannellini beans, drained
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, chopped
- 16 oz tomato sauce
- 1 teaspoon crushed red pepper flakes
- 3 tablespoon fresh basil, divided
- 5 oz cheese, divided
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for several minutes, stirring occasionally, until the onion is soft and translucent.
- Add the garlic and chopped mushrooms to the skillet. Cook for a few minutes until the garlic is fragrant and the mushrooms have released their moisture and begun to soften.
- Stir in the tomato sauce, crushed red pepper flakes, salt, and pepper. Reduce the heat slightly and let the sauce simmer for a few minutes so the flavors can come together.
- Add the drained cannellini beans and most of the fresh basil. Gently stir to coat the beans evenly in the sauce and allow everything to heat through.
- Sprinkle in most of the cheese and stir until it melts into the sauce, creating a creamy, pizza-inspired texture.
- Taste and adjust seasoning as needed. Top with the remaining cheese and basil, cover briefly if needed, and let the cheese melt before serving warm.
Notes
- This dish pairs well with crusty bread or over a bed of rice.
- Feel free to adjust the spice level by adding more or less crushed red pepper.
