Description

A delicious and creamy skillet dish featuring cannellini beans, fresh basil, and melted cheese.


Ingredients

  • 28 oz cannellini beans, drained
  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, chopped
  • 16 oz tomato sauce
  • 1 teaspoon crushed red pepper flakes
  • 3 tablespoon fresh basil, divided
  • 5 oz cheese, divided
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for several minutes, stirring occasionally, until the onion is soft and translucent.
  2. Add the garlic and chopped mushrooms to the skillet. Cook for a few minutes until the garlic is fragrant and the mushrooms have released their moisture and begun to soften.
  3. Stir in the tomato sauce, crushed red pepper flakes, salt, and pepper. Reduce the heat slightly and let the sauce simmer for a few minutes so the flavors can come together.
  4. Add the drained cannellini beans and most of the fresh basil. Gently stir to coat the beans evenly in the sauce and allow everything to heat through.
  5. Sprinkle in most of the cheese and stir until it melts into the sauce, creating a creamy, pizza-inspired texture.
  6. Taste and adjust seasoning as needed. Top with the remaining cheese and basil, cover briefly if needed, and let the cheese melt before serving warm.
