- ½ teaspoon onion powder
- ½ teaspoon paprika (for a pinch of heat)
- 1 tablespoon vegetable oil (for frying)

Instructions
- Start by cutting the chicken thighs into bite-sized pieces.
- In a mixing bowl, combine cornstarch, flour, salt, black pepper, garlic powder, onion powder, and paprika. Toss the chicken pieces in the mixture until they are evenly coated.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Once the oil is hot, add the coated chicken in a single layer. Fry for about 4-5 minutes on each side or until golden brown and crispy.
- Once cooked, transfer the chicken to a plate lined with paper towels to absorb any excess oil.
- Transfer the chicken to a serving platter. Garnish with chopped cilantro and serve with lime wedges on the side.
