Description

A delicious and healthy dish featuring salmon fillets baked with lemon garlic butter, asparagus, and cherry tomatoes.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 lemon, sliced and juiced
  • 1 teaspoon dried Italian herbs or parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus, trimmed

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Arrange salmon fillets in the center of the sheet pan. Place cherry tomatoes and asparagus around the salmon.
  3. In a small bowl, whisk together melted butter, olive oil, minced garlic, lemon juice, dried herbs, salt, and black pepper.
  4. Pour the lemon garlic butter mixture evenly over the salmon and vegetables. Garnish salmon with lemon slices.
  5. Bake for 18-20 minutes or until the salmon flakes easily with a fork and the vegetables are tender. Serve immediately.
