- 1 lb rigatoni pasta
- 1 lb hot Italian sausage, casings removed
- 1 small yellow onion, finely chopped
- 4 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes (optional)
- 1 (28 oz) can crushed tomatoes
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- Fresh basil or parsley, chopped (optional, for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through.
- Add chopped onion and cook until soft, about 4 minutes. Stir in garlic and red pepper flakes and cook for another minute.
- Pour in the crushed tomatoes. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Reduce heat to low and stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
- Add the cooked rigatoni to the skillet and toss to coat evenly in the sauce.
- Serve hot, garnished with extra Parmesan and fresh herbs if desired.

- This dish can be made with ground turkey or chicken sausage for a lighter option.
- Using fresh herbs for garnish can enhance the flavor and presentation.
