Description

A delicious creamy pasta dish featuring rigatoni, hot Italian sausage, and a rich sauce.


Ingredients

  • 1 lb rigatoni pasta
  • 1 lb hot Italian sausage, casings removed
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (28 oz) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through.
  3. Add chopped onion and cook until soft, about 4 minutes. Stir in garlic and red pepper flakes and cook for another minute.
  4. Pour in the crushed tomatoes. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. Reduce heat to low and stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  6. Add the cooked rigatoni to the skillet and toss to coat evenly in the sauce.
  7. Serve hot, garnished with extra Parmesan and fresh herbs if desired.
