Description

A colorful assortment of fresh vegetables served with a delicious dill dip.


Ingredients

  • 1 bunch rainbow carrots
  • 1 bunch celery
  • 1 English cucumber
  • 1 cup snap peas
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 cup steamed or blanched broccoli
  • 1 bunch radishes
  • 1 cup multi-colored cherry tomatoes
  • 1/2 cup olives
  • 1 cup full fat Greek yogurt or sour cream
  • 1 cup mayonnaise
  • 2 tablespoons dried dill
  • 1 1/2 tablespoons dried minced onion
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt

Instructions

  1. Slice the vegetables.
  2. Steam the broccoli or blanch the broccoli and sprinkle it with salt, which makes the texture more pleasant for eating.
  3. Mix the ingredients for the dill dip in a large bowl.
  4. Refrigerate for 30 minutes for best flavor (dip stores up to 1 week refrigerated).
  5. If making another dip, mix up the hummus or other dip recipe.
  6. Place the dips in small shallow bowls.
  7. Arrange the vegetables around the dips.
  8. Serve immediately.
