Instructions

  1. Make the Chocolate Ganache Layer: Start by placing the chocolate chips in a heat-safe bowl. In a small saucepan, heat 1/4 cup of heavy cream just until it begins to steam—don’t let it boil. Pour the hot cream over the chocolate and let it sit for a minute to soften, then stir until smooth and glossy. Set this aside to cool to room temperature. You want it pourable, but not hot.
  2. Whip the Vanilla Mousse: In a large mixing bowl, pour in the chilled heavy whipping cream. Using a hand mixer or stand mixer, begin whipping on medium speed. As it starts to thicken, add the sugar and vanilla extract. Continue whipping until soft peaks form. Be careful not to overwhip—you want soft, billowy peaks that hold their shape.
  3. Layer the Dessert: Spoon a little chocolate ganache into the bottom of each serving glass. Then, carefully spoon or pipe the vanilla mousse on top. You can alternate layers if you’d like a marbled effect, or keep it classic with mousse on top and a chocolate surprise underneath.
  4. Chill Before Serving: Cover the glasses lightly and refrigerate for at least 1 hour before serving. This allows the mousse to set and the flavors to meld together.
