- 1 bunch asparagus (trimmed)
- 4 cloves garlic (minced)
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- Gather all ingredients. If using frozen shrimp, thaw and pat dry.
- Heat olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant, about 1 minute.
- Add shrimp in a single layer; season with salt and pepper. Cook for 3-4 minutes per side until pink and opaque.
- When shrimp are nearly done, add asparagus to the skillet, stirring to coat with garlic oil.
- Squeeze fresh lemon juice over the mixture before removing from heat.
- Garnish with chopped parsley and serve hot over rice or pasta.
