Description

A fresh and flavorful corn salsa, perfect for chips or as a topping.


Ingredients

  • 1 ½ cups frozen yellow corn, thawed and drained
  • ¼ cup red onion, finely minced
  • ½ small-medium jalapeño, finely minced (about 1 tablespoon)
  • ⅓ cup finely chopped fresh cilantro leaves
  • 12 tablespoons lime juice (½1 medium lime)
  • ¼ teaspoon fine salt, plus more to taste

Instructions

  1. To a medium bowl, add the corn, onion, jalapeño, cilantro, lime juice, and salt.
  2. Mix well to combine. Taste and add more salt if desired.
  3. Serve right away or cover and refrigerate for up to 4 days.

Notes

  • This salsa is best served fresh but can be stored in the refrigerator for up to 4 days.
  • Adjust the jalapeño to control the heat level.
