A fresh and flavorful corn salsa, perfect for chips or as a topping.
Ingredients

- 1 ½ cups frozen yellow corn, thawed and drained
- ¼ cup red onion, finely minced
- ½ small-medium jalapeño, finely minced (about 1 tablespoon)
- ⅓ cup finely chopped fresh cilantro leaves
- 1–2 tablespoons lime juice (½ – 1 medium lime)
- ¼ teaspoon fine salt, plus more to taste
Instructions
- To a medium bowl, add the corn, onion, jalapeño, cilantro, lime juice, and salt.
- Mix well to combine. Taste and add more salt if desired.
- Serve right away or cover and refrigerate for up to 4 days.
Notes
- This salsa is best served fresh but can be stored in the refrigerator for up to 4 days.
- Adjust the jalapeño to control the heat level.
