Ingredients

  • 8 oz Fettuccine
  • 1 tbsp Salt (for pasta water)
  • 1 lb Shrimp (large, peeled and deveined)
  • 1 tbsp Cajun seasoning
  • 1 cup Heavy cream
  • 2 cloves Garlic (minced)
  • 1/2 cup Parmesan cheese (freshly grated)
  • 2 tbsp Butter
  • 2 tbsp Green onions (chopped)
  • 2 tbsp Parsley (fresh, chopped)

Instructions

  1. Bring a large pot of salted water to a boil, then add fettuccine. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and season with Cajun spices. Cook for 3-4 minutes until they turn pink and opaque, then remove from the skillet.
  3. In the same skillet, melt 2 tablespoons of butter. Add minced garlic and cook until fragrant and translucent, about 2-3 minutes.
  4. Pour in heavy cream and stir until it begins to simmer. Gradually mix in grated Parmesan cheese until melted and creamy, about 2-3 minutes.
  5. Return the cooked shrimp to the skillet and toss in the drained pasta. Stir gently to coat all ingredients in the creamy sauce for about 2 minutes.
  6. Garnish with freshly chopped parsley for a pop of color.
