Description

A delicious fruit dessert pizza made with a sugar cookie base and topped with a creamy lemon filling and fresh fruits.


Ingredients

Scale
  • 16 ounces sugar cookie dough
  • 8 ounces cream cheese (room temperature)
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 cup plus 2 tablespoons powdered sugar
  • 2 tablespoons heavy cream
  • 8 strawberries (sliced)
  • 1 kiwi (sliced)
  • 1/2 cup blueberries

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Firmly and evenly press the sugar cookie dough into a 12-inch round pizza pan.
  3. Place the crust in the preheated oven and bake for 25 minutes or until the edges are golden brown and the center is set. Remove from oven and let cool.
  4. In a large bowl, add the cream cheese using a hand mixer on medium until creamy.
  5. Add the lemon zest, lemon juice, powdered sugar, and heavy cream. Beat until incorporated. Scrape down the sides and bottom of the bowl and mix in any remaining bits. Once everything is incorporated, beat on medium speed for 1 minute.
  6. Spread the cream cheese mixture evenly on top of the cooled cookie base using an angled spatula.
  7. Slice the fruit using a mandoline or knife and place on the pizza.
  8. Refrigerate until ready to serve.

Notes

  • This dessert can be made ahead of time and stored in the refrigerator until serving.
  • Feel free to substitute the fruits with seasonal or preferred choices.
