Description

A delicious combination of roasted sweet potatoes and beef sausage coated in a honey garlic sauce.


Ingredients

  • 1 pound beef sausage
  • 2 pounds sweet potatoes
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup non-alcoholic alternative (apple cider vinegar or chicken broth)
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into uniform 1-inch cubes.
  3. Toss the sweet potato cubes with olive oil, salt, and black pepper on a large baking sheet.
  4. Roast the sweet potatoes in the preheated oven for about 15-20 minutes.
  5. While the sweet potatoes are roasting, slice the beef sausage into ½-inch thick rounds.
  6. In a small bowl, whisk together the honey, minced garlic, soy sauce, non-alcoholic alternative, grated fresh ginger, and cornstarch until smooth.
  7. After the sweet potatoes have roasted, add the sliced beef sausage to the baking sheet.
  8. Drizzle half of the prepared honey garlic sauce over the sweet potatoes and sausage, then toss to coat.
  9. Return the baking sheet to the oven and continue roasting for another 15-20 minutes.
  10. Once cooked, remove the baking sheet from the oven and add the remaining honey garlic sauce.
  11. Toss everything again on the baking sheet and adjust seasoning if necessary.
  12. Serve immediately and enjoy!
