Instructions
- Preheat your oven to 350°F (175°C) and grease a bundt pan.
- In a large bowl, mash the ripe bananas until smooth.
- Whisk in sugar, eggs, vegetable oil, and vanilla extract until well combined.
- In another bowl, sift together flour, baking powder, cinnamon (if using), and salt.
- Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
- Pour the batter into the prepared bundt pan and shake gently to level.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
