Deliciously chewy oatmeal chocolate chip squares that are easy to make and perfect for a snack.

- 2 cups old-fashioned rolled oats
- 1 cup brown sugar (light or dark)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp fine sea salt
- 1/2 cup unsalted butter (melted)
- 2 large eggs (room temperature)
- 1 tsp pure vanilla extract
- Optional: 1 cup chocolate chips or nuts
Instructions
- Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish or line it with parchment paper.
- In a large bowl, mix rolled oats, flour, baking powder, and salt until combined.
- In another bowl, whisk melted butter and brown sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Combine the wet mixture with the dry ingredients until just mixed. Fold in your choice of chocolate chips or nuts.
- Pour the batter into the prepared dish and spread evenly. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool before cutting into squares.
Notes
- These squares can be stored in an airtight container at room temperature for up to 3 days.
- Feel free to substitute other mix-ins like dried fruit or different types of nuts to suit your taste.
