  • 1 1/2 cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (50 g) almond flour
  • 1/2 cup (120 ml) milk
  • 1/4 cup (30 g) slivered almonds (for topping)
  • Additional maple syrup (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a small bowl, toss the thinly sliced pears with a tablespoon of maple syrup to coat them lightly. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In another bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  7. Gently fold in the prepared pear slices into the batter, ensuring they are evenly distributed.
  8. Pour the batter into the prepared cake pan, smoothing the top with a spatula. Arrange any remaining pear slices on top of the batter for decoration.
  9. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown.
  10. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, drizzle with additional maple syrup for a glossy glaze.
