- 1 package (8 oz) cream cheese, softened
- 1 cup crushed pineapple, well-drained
- 1 cup shredded cheddar cheese
- 1/4 cup chopped red or green bell pepper
- 2 tablespoons chopped green onions
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup chopped pecans for coating
Instructions
- Drain the crushed pineapple thoroughly using a mesh strainer. Press with paper towels to remove excess liquid.
- In a large bowl, mix softened cream cheese, drained pineapple, shredded cheddar, chopped bell pepper, green onions, salt, and pepper until fully combined.
- Transfer the mixture onto a sheet of plastic wrap and shape into a ball. Wrap tightly and refrigerate for at least 2 hours.
- Once chilled and firm, roll the cheese ball in chopped pecans, pressing gently to ensure full coverage.
- Serve on a plate with crackers, veggie sticks, or baguette slices.
