Description
Delicious and healthy lentil wraps filled with pineapple and fresh vegetables.
Ingredients

- 1 cup green lentils (rinsed and drained)
- 2 cups vegetable broth
- 1 cup pineapple chunks (fresh or canned)
- 1 medium red bell pepper (diced)
- 1 medium carrot (shredded)
- 1 cup spinach (fresh)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- 1 teaspoon ginger (grated)
- 1 teaspoon garlic (minced)
- 4 large whole wheat wraps
Instructions
- In a large pot, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until lentils are tender.
- In a mixing bowl, combine the cooked lentils, pineapple, red bell pepper, carrot, spinach, soy sauce, olive oil, ginger, and garlic. Mix well.
- Lay a whole wheat wrap on a flat surface. Spoon a generous amount of the lentil filling onto the center of the wrap.
- Fold the sides of the wrap over the filling, then roll it up tightly from the bottom to the top. Repeat with remaining wraps.
- Cut the wraps in half and serve immediately, or wrap in foil for a portable meal.
Notes
- This dish is great for meal prep and can be enjoyed cold as well.
