Description

Delicious and healthy lentil wraps filled with pineapple and fresh vegetables.


Ingredients

  • 1 cup green lentils (rinsed and drained)
  • 2 cups vegetable broth
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium red bell pepper (diced)
  • 1 medium carrot (shredded)
  • 1 cup spinach (fresh)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon olive oil
  • 1 teaspoon ginger (grated)
  • 1 teaspoon garlic (minced)
  • 4 large whole wheat wraps

Instructions

  1. In a large pot, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until lentils are tender.
  2. In a mixing bowl, combine the cooked lentils, pineapple, red bell pepper, carrot, spinach, soy sauce, olive oil, ginger, and garlic. Mix well.
  3. Lay a whole wheat wrap on a flat surface. Spoon a generous amount of the lentil filling onto the center of the wrap.
  4. Fold the sides of the wrap over the filling, then roll it up tightly from the bottom to the top. Repeat with remaining wraps.
  5. Cut the wraps in half and serve immediately, or wrap in foil for a portable meal.

Notes
