- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 6 slices Beef Bacon
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Mozzarella Cheese
- 1 cup Gravy
- 4 large Eggs
- 1/2 cup Unsalted Butter, melted and warm (for Hollandaise)
- 3 large Egg Yolks (for Hollandaise)
- 1 tablespoon Dijon Mustard (for Hollandaise)
- 1 tablespoon Apple Cider Vinegar (for Hollandaise)
- 1 tablespoon Lemon Juice (for Hollandaise)
- 1/4 teaspoon Cayenne Pepper (for Hollandaise)
- Fresh chives or parsley, chopped, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add frozen hash browns and cook until golden brown and crispy, about 10-15 minutes.
- In the same skillet, add beef bacon and cook until crispy.
- In a large bowl, whisk together eggs, salt, pepper, and cheese. Stir in the cooked bacon and hash browns.
- Transfer the mixture to a greased baking dish and bake for 25-30 minutes until set.
- For the hollandaise sauce, whisk together egg yolks, Dijon mustard, apple cider vinegar, lemon juice, and cayenne pepper in a bowl.
- Slowly drizzle in melted butter while whisking until the sauce thickens.
- Serve the casserole with gravy and hollandaise sauce drizzled on top. Garnish with fresh chives or parsley.

- Be sure to use a non-stick skillet or a well-oiled pan to prevent sticking.
- Feel free to substitute different cheeses or add vegetables for variety.
- This dish can be made ahead of time and reheated in the oven.
